Put boiled potatoes, peas, fenugreek, coriander, green chillies, salt, red chilli powder, turmeric powder and fennel in a mixing bowl or plate and mix them all well.

Now heat oil in a pan, add mustard seeds and cumin and let it crackle, after that add garlic and ginger and cook/stir for few seconds, add the prepared potato masala mixture, and mix well and turn off the heat.
Remove the mixture in a plate and keep it to cool. - 3
For making dough - Mix flour, oil and salt in a bowl and make a semi stiff dough using water. Cover the dough and keep it to set for 10 to 15 minutes.

Now knead the dough again to make it soft. Take a portion from dough, dust with flour, roll it lightly and place prepared stuffing in centre, close it well with light hands, roll the paratha gently and place on hot tawa to roast from both sides.apply ghee or oil while roasting. Prepare all the paranthas in the same way.

Serve this hot tempting paratha with curd / pickle.
