Ingredients

  • 1/2 kgbaigan
  • 1 tbspginger garlic paste
  • 1.1/2 tbsp red chilli powder
  • Salt as your taste
  • 1 tspcumin powder
  • 1.1/2tbsp coriander powder
  • 3 tbspFry onion grinded
  • 3/4 cupoil
  • 2 tbsppeanuts
  • 2 tbspcoconut sharded
  • 1/2 cuptamarind pulp
  • 1.1/2 tbsp Seame seeds
  • For Baghar(Tarka)
  • 1/2 tspwhole white cumin
  • 15curry leaves
  • 1/2 tspfenugreek seeds (mathi seed)
  • 1/2 tsponion seeds (kalonji)

Steps

  1. 1

    Make 4 small cuts in the brinjals (bagain) but don"t separate them and keep.

    In a pot add cooking oil on medium heat and add the baghar to the pan (onion seed,cumin seeds,fenugreek seeds and curry leaves.

  3. 3

    Than add the brinjals and stir fry for a couple of minutes and then take the brinjals out.

    Add a little water, Gingergarlic paste,red chillipowder,coriander powder, salt, zeera,coconutpowder,peanut powder,sesame seeds powder,curry leaves, and rest of the spices to the pen.

  5. 5

    Add the fried brinjals and cook for 2 minutes.
    Finally add the tamarind pulp,cover and on very low heat for 10 minutes.
    And serve with Boiled rice and chapati.
