Mash potatoes keep aside.

Heat oil in pan add mustard seed splutter it add hing cumin seeds coriander seeds add potatoes salt red chilli powder turmeric powder coriander leaves curry leaves mango powder mix it and transfer in a bowl.

Take besan in mixing bowl add salt carom seeds water makes medium-thick consistency add baking soda mix it keep aside.

Make medium size balls from potatoes mix.

Heat oil in pan for deep frying add 1tsp hot oil in batter mix it dip vadas in batter and deep fry it in oil gold in colour serve with green chutney tamarind chutney and pav onion salad this vada pav you can eat any time of the day I served with homemade pav
