Preheat the oven to 350°F (180°C), on convection.

Place a pan over high heat.

In a bowl, add the chicken thighs. Add a little oil and season with salt and pepper. Coat the entire surface of the thighs and transfer to the hot pan.

Sauté for 2-3 minutes on each side until browned. Deglaze with the juice of 1 lemon and remove from heat.

In a 13-inch baking dish (make sure it has depth), add the rice, lemon zest, bay leaves, chopped garlic, rosemary (I used thyme), oregano, salt, pepper, 4-5 tablespoons olive oil, the broth, juice of the 2nd lemon, and the chicken thighs.

Carefully transfer to the oven and bake for 60 minutes.
