Ingredients

  1. 3chicken thighs
  2. olive oil
  3. salt
  4. pepper
  5. juice of 1-2 lemons
  6. 500 gramsbasmati rice
  7. zest of 1 lemon
  8. 2bay leaves
  9. 1 clovegarlic
  10. 2 sprigsrosemary (I used a little thyme)
  11. 1 teaspoonoregano
  12. 6 1/3 cupschicken broth (if you don't have it, use 2 chicken bouillon cubes in water)

Steps

    Preheat the oven to 350°F (180°C), on convection.

  2. 2

    Place a pan over high heat.

  3. 3

    In a bowl, add the chicken thighs. Add a little oil and season with salt and pepper. Coat the entire surface of the thighs and transfer to the hot pan.

    Sauté for 2-3 minutes on each side until browned. Deglaze with the juice of 1 lemon and remove from heat.

    In a 13-inch baking dish (make sure it has depth), add the rice, lemon zest, bay leaves, chopped garlic, rosemary (I used thyme), oregano, salt, pepper, 4-5 tablespoons olive oil, the broth, juice of the 2nd lemon, and the chicken thighs.

    Carefully transfer to the oven and bake for 60 minutes.
