Steps

First of all take all purpose flour, add salt n pepper n ajwain. Add oil n adding water gradually bind a semi soft dough. Rest the dough for 15 minutes.

Make the filling. Take potatoes n boil them n mash them. Add all the ingredients mentioned above in list. Make the potato mixture ready.

Take the dough. Need again for 2 minutes. Now, make small portions from the dough. Now roll the small ball size dough very thin. Now trim the sides n make the puri square.

Now place the potato mixture n cover it with 1 side with the puri. Now make vertical cuts on remaining puri. Don't cut till the end. Keep some space. Now roll the puri from where the potato mixture is placed. Make circular n join the ends. Deep fry the samosas.
