Methi Egg Bhurji
Steps

Clean and wash the methi leaves.
Chop the Onion, tomato, green chilli and capsicum finely

In a pan heat the oil and crackle the mustard and cumin then add the onion

Saute the onion well and then add the green chilli, tomato, curry leaves and capsicum with little salt.

Then add the methi leaves and cook well.

Once it is cooked add turmeric powder, hing, garam masala and saute the same

Meanwhile we shall prepare the egg mixture, by beating the eggs with red chilli powder and little salt. Here I beated the egg white and yellow separately to make it fluffy.

Add the beaten eggs to the cooked methi leaves mixture.

Mix the egg mixture finely with the methi leaves mixture.

Cook for about 3-4 minutes on sim flame or until eggs are done.

Finally sprinkle pepper cumin powder.

Serve with hot rice or chapathi.
