This recipe is perfect for an appetizer or a starter!

Wash the spinach and mix it with the beaten eggs. Season with salt and pepper. Pour the mixture onto a rectangular baking sheet lined with parchment paper. Bake for 15 minutes at 350°F (180°C). Let cool on a rack with the parchment paper.

Spread the cheese over the cooled omelette, leaving a border around the edges. Lay the smoked salmon on top, then roll up tightly. Wrap the roll in the parchment paper and refrigerate. Slice into pieces and enjoy!
