Take a bowl mix semolina, rice flour, curd and salt mix it well and let it rest for 30 mins. Add eno just before start making uttapam. Chopped tomato and coriander leaves finely.

Now heat a non stick tawa on medium flame, grease it and make small Uttapam with the help of ladle. Make a layer of chopped tomatoes and coriander leaves.

Cook this side until golden brown and flip the side and cook this side as well. When done serve these quick mini tomato uttapam with any dip/chutney/ketchup with a hot cup of tea/coffee.
