  4. 3egg yolks
  5. 1/4 cupsugar (about 50 grams)
  6. 2 1/2 tablespoonscornstarch (about 20 grams)
  7. Brown sugar

    Pour the milk, the peel of half an orange, the lemon peel, and the cinnamon stick into a saucepan.

    When it comes to a boil, remove from heat and cover. Let it sit for 30 minutes.
