Heat the coconut oil over a medium heat before adding the garlic and ginger, cook for 2-3 minutes until fragrant.

Add the curry paste and cook for a further 2-3 minutes

Add the coconut milk and stir well until well incorporated, add the vegetable broth and soy sauce before bringing to a boil

Once boiling, add the honey and rice noodles and cook for 2 minutes, stirring frequently to prevent the noodles from sticking together

Add the tofu, broccoli and bell pepper and allow to cook for 3-5 minutes until the noodles are cooked and the broccoli is tender
