Ingredients

  • 2 TablespoonsCoconut Oil
  • 3Garlic Cloves, Minced
  • 1 tbspGinger, Minced
  • 2.5 tbspRed Curry Paste
  • 1 tspSoy Sauce
  • 1 canCoconut Milk
  • 720 mlVegetable Stock
  • 1 tbspHoney
  • 225 gWide Rice Noodles
  • 200 gTofu, Cubed
  • 300 gBroccoli Florets
  • 1Red Pepper, Sliced

Steps

  1. 1

    Heat the coconut oil over a medium heat before adding the garlic and ginger, cook for 2-3 minutes until fragrant.

  2. 2

    Add the curry paste and cook for a further 2-3 minutes

  3. 3

    Add the coconut milk and stir well until well incorporated, add the vegetable broth and soy sauce before bringing to a boil

  4. 4

    Once boiling, add the honey and rice noodles and cook for 2 minutes, stirring frequently to prevent the noodles from sticking together

  5. 5

    Add the tofu, broccoli and bell pepper and allow to cook for 3-5 minutes until the noodles are cooked and the broccoli is tender
