A tweak on Food Medic’s ( dr. Hazel Wallace) almond croissant baked oats recipe from IG. I swapped the apple sauce for bite size cut pears to give sweetness and extra texture and swapped protein powder and milk for cottage cheese, eggs and chia seeds making it a high protein high fiber breakfast or dessert. The vanilla extract, almond croissant style filling and roasted almond flakes on top make it irresistible.

Preheat the oven to 180°C fan. Grease a baking dish or line it with a baking sheet.

Combine oats and chia seeds in a bowl. In a blender blend eggs, cottage cheese, vanilla extract, sugar, water and baking powder then pour it over the oats and chia seeds. Cut the pears to bite size and add them to the mixture. Pour this mixture into the lined baking dish.

In a small bowl, mix together the ground almonds, honey, and almond butter, then spoon this over the top and spread.

Finish by sprinkling over the flaked almonds.

Bake for 35-40 minutes, until set and lightly golden.
