Ingredients

  • 1 piecechicken breast
  • 0.7 oz (20 grams)diced potato
  • 0.7 oz (20 grams)sliced onion
  • Massaman curry paste
  • Coconut milk
  • 1.8 oz (50 grams)finely ground peanuts
  • 0.7 oz (20 grams)curry powder

Steps

  1. 1

    Mix the curry powder with coconut milk and season lightly. The flavor should be similar to satay chicken marinade.

  2. 2

    Pound the chicken breast to flatten it for rolling. Marinate the chicken with the curry coconut mixture and set aside.

  3. 3

    Sauté the onion and potato together. Season with salt and pepper to taste.

  4. 4

    Place the sautéed mixture on the chicken, then roll it up tightly using plastic wrap. Boil the wrapped chicken roll.

  5. 5

    To make the sauce, combine Massaman curry paste, coconut milk, and ground peanuts. Season to taste and set aside.

  6. 6

    Once the chicken is cooked, grill it until browned.

  7. 7

    Arrange the finished roll on a plate as desired.
