This is my version of a Penang curry. I have substituted Coconut milk for Almond milk & I thought it worked well. IMO a tough curry to get right as there is lots of layers in the flavour. Subtlety is key as is tasting throughout the cooking.
Served with Oomi low carb noodles

Ingredients

  • King prawns (I used cooked for quickness but raw is probably better)
  • 1 tspchopped ginger
  • 1 tspchopped garlic
  • 1lemongrass stalk (break with back of the knife)
  • 1lime zest & juice
  • 2lime leaves
  • 1red chilli
  • 2 tspred curry paste
  • 3spring onions
  • Chopped coriander
  • 1/2 pintalmond milk
  • Salt
  • 2 tsppeanut butter

Steps

  1. 1

    Cook the garlic lemongrass ginger chilli & lime leaves over low heat for 5 mins. I used coconut oil.

  2. 2

    Add curry paste cook for further 5 mins

  3. 3

    Add milk & simmer for 10 mins just till the sauce starts to thicken

  4. 4

    Add all other ingredients cook for 2 mins. Stir in peanut butter & lime juice. serve
