Thai King Prawn Penang

This is my version of a Penang curry. I have substituted Coconut milk for Almond milk & I thought it worked well. IMO a tough curry to get right as there is lots of layers in the flavour. Subtlety is key as is tasting throughout the cooking.

Steps

Cook the garlic lemongrass ginger chilli & lime leaves over low heat for 5 mins. I used coconut oil.

Add curry paste cook for further 5 mins

Add milk & simmer for 10 mins just till the sauce starts to thicken
- 4
Add all other ingredients cook for 2 mins. Stir in peanut butter & lime juice. serve
