Winter Vegetables Saute

Several dishes can be prepared with winter vegetables. Vegetable sauté is a highly nutritious recipe with many colourful winter vegetables. I have taken here different bellpeppers with other veggies and mushroom. A simple preparation with butter/ghee and back pepper sprinkled gives the recipe a marvelous taste loaded with vitamins and micronutrients. Children also love to savour due to vibrant colour and taste.

I have taken here different bellpeppers with other veggies and mushroom. Blanch the cauliflower florets for 2 minutes separately.
In a wok heat ghee, splutter sahjeera. Add crushed garlic and sauté in high flame for 30 seconds.

Add bell peppers and mushrooms. Cook and stir occasionally for about 3 minutes.
Add peas and broccoli florets and mix well. Add rest of the other seasonings (except black pepper). Now add the steamed cauliflower and 2tbsp of warm water. (The mushrooms will also leave water).
Bring to boil. Simmer, cover for about 2 to 3 minutes till the vegetables are soft and tender. - 3
Bring down from the flame and mix the black pepper powder. Serve hot as a breakfast / with boiled quinoa / boiled dahlia.

Winter vegetables sauté is extremely healthy and yummy recipe.But please tell me if we want to prepare summer vegetables sauté which vegetables should we use ?And shahi jeera can be replaced with some other ingredient? Thanks a lot in advance.
