I, like many of us, hate wasting food. So with some leftovers, I made this recipe.

Using a round cookie cutter, cut 5 circles out of the buckwheat crepe.

Mash the avocado flesh and mix it with the light mayonnaise.

Start assembling: Place a crepe circle in the cookie cutter, then add half the celery remoulade and press down firmly.

Add another crepe circle, then the avocado mixture, and press down.
- 5
Repeat these steps once more, then place the last crepe circle on top.

Garnish with chorizo and a little basil.
