Ingredients

Serves 1 serving
  • 1avocado
  • 1buckwheat crepe
  • 2 teaspoonsmayonnaise (about 10 grams)
  • 1/4 cupcelery remoulade (about 60 grams)
  • 1 ouncechorizo (about 30 grams)

Steps

  1. 1

    Using a round cookie cutter, cut 5 circles out of the buckwheat crepe.

  2. 2

    Mash the avocado flesh and mix it with the light mayonnaise.

  3. 3

    Start assembling: Place a crepe circle in the cookie cutter, then add half the celery remoulade and press down firmly.

  4. 4

    Add another crepe circle, then the avocado mixture, and press down.

  5. 5

    Repeat these steps once more, then place the last crepe circle on top.

  6. 6

    Garnish with chorizo and a little basil.
