Clean and wash the spinach leaves and keep aside.

Heat oil in a kadhai add panch phoron then add onion paste along with all the dry masala, keep stirring until masala leaves the oil and the raw smell goes away.

Now add the spinach leaves along with the potato, now add the tomato, add little water and allow to cook on low flame.

Now the potato and saag turns soft add coriander leaves and serve with rice or roti.
