Poach the chicken in water still cooked.

Leave to cool the shred

In a pestle and mortar add all the other ingredients and make the paste

Add to the shredded chicken and mix best to use a metal spoon or you spoon will be a vivid yellow

Coat the bottom of a fringe pan with oil and stir fry the chicken mixture until its fragrant and dried our

Lay out on paper and drain off any excess oil allow to cool and shred once more. This is lovely to sprinkle on rice or a salad
