Cooking Instructions

Soak both ground nut & white rice in seperate containers for 2-3 hours then take to the engine & grind. Sieve the groundnut residue away & put the ground nut water on heat & bring to boil the drop 3 pieces of ginger inside & stay close while string it as it makes endless foams.

In the mean time filter the white rice mixture & remove the residue using a sieve. Once the ground nut water on heat stop making foam then u add in the rice mixture string gently until it thickens & the desired consistency is achieve the u off the heat & filter a again to remove lumps then add sugar & serve.

NB; u can squeeze lemon in it to enhance the taste & proper consistency.

Instructions for how to make amazake are printed on the back of the package of koji. Since the temperature needs to be controlled, I noted down the time and amounts of ingredients. Have it as a nutritious aperitif, since amazake is known as a "drinkable IV fluid". Also use it as a sweetener when cooking.You may use up to about 800 ml of hot water, but be sure to measure the temperature! If a high temperature is maintained for too long, the koji bacteria will die. Since amazake is generally served cold (with ice), it can be on the thick side. Dilute with water to taste.
