Preheat the oven to 180 oC

Add a drizzle of olive oil to shallow pan over a medium heat
Saute the bacon, onion, garlic, onion and peppers for 5 minute - 3
Whisk the eggs in a large bowl
Stir in the bacon mixture, spinach, tomatoes, cheese and seasoning - 4
Grease a casserole dish
Pour in the gg mixture - 5
Bake for 30 minutes
Allow to cool slightly before slicing and serving
