Ingredients

6 servings
  1. 9eggs
  2. 3smoked bacon
  3. 3 tbspsspinach chopped
  4. 3 tbspsonion diced
  5. 3 tbspstomato chopped
  6. 3pepper chopped
  7. 3 tbspsdairy free cheese
  8. pinchchilli flakes

Steps

  1. 1

    Preheat the oven to 180 oC

  2. 2

    Add a drizzle of olive oil to shallow pan over a medium heat
    Saute the bacon, onion, garlic, onion and peppers for 5 minute

  3. 3

    Whisk the eggs in a large bowl
    Stir in the bacon mixture, spinach, tomatoes, cheese and seasoning

  4. 4

    Grease a casserole dish
    Pour in the gg mixture

  5. 5

    Bake for 30 minutes
    Allow to cool slightly before slicing and serving
