Idlis with vegetables is a healthy recipe with less oil and boiled rice. I have made coarse powder with boiled rice and split white urad dal in 3:1 ratio. So the idlis are soft , tastier and easy to digest. With add-in veggies the Idlis become mote healthier also.

Ingredients

  1. For Idli batter
  2. 2 1/2 cup idli powder
  3. 1/2 cupbuttermilk
  4. 1 cupMix veggies finely chopped
  5. 2 tspCoriander leaves
  6. 1/2 tspSambar masala powder
  7. to tasteSalt
  8. 1/3 tsp sugar
  9. as neededWater to make batter
  10. For tempting
  11. 1 tsp butter
  12. 1/2 tsp mustard seeds
  13. 7-8curry leaves
  14. 1 pinch hing (asafoetida)power
  15. 1 tspsplit urad dal
  16. 1 tspChana dal
  17. 1chopped green chilli (optional)

    In a mixing bowl, mix all the ingredients of idli batter (except water, chopped veggies and coriander leaves) Mix well and add water little at a time,to get batter of idli consistency. Cover and keep the bowl in a warm place for 1 hour to rise up to batter.

    In tempering pan heat butter, splitter mustard seeds. Then add 1 tsp both the dal, chopped chilli and hing powder. Saute for 1 /2 minute till the aroma of dals, come out. Add curry leaves and 2 tsp water. Bring to boil and then mix wit

    Now mix chopped veggies and coriander leaves.

    Heat water in idli maker.
    Grease the idli wholes. Add 2 tbsp batter on each whole. Steam for 10 minutes. Switch off the flame and cool down the molds.

    Serve steaming idlis in breakfast with, chutney / curry or even with tea.

    Notes:- winter veggies like carrot, capsicum, beetroot, salgam, french beans etc.

    Insert toothpick or knife to check the idlies are done. If the toothpick comes out, clean, then the idlis are well cooked.

    Baking soda can be used instead of curd or buttermilk,to get a fluffy idli batter and spongy idlis.
