First, take a dish and place the meat in it. Add all the spices to the meat except for the oil, water, and saffron threads, which will be added at the end.

Rub the meat well with the spices by hand and place it in the special tangia pot, which is made of clay. Then add the olive oil on top and the whole garlic cloves. Dissolve the saffron threads in half a cup of water and pour it over the meat inside the tangia.

Finally, cover the top of the tangia with parchment paper and secure it tightly with string. Then send it to the traditional oven used for heating the public bath in Morocco, where it cooks over embers. Enjoy your meal!
