Ingredients

  • 1 tbspVegetable Oil
  • 1 lbBoneless Skinless Chicken Breast, cut into 1-inch pieces
  • 2Garlic Cloves
  • 2 tspgingerroot
  • 1Medium Onion, cut into thin wedges
  • 1 CupBaby-cut Carrots, cut lengthwise in half
  • 1 CupChicken Broth
  • 3 tbspSoy Sauce
  • 2 tspSugar
  • 2 CupsBroccoli Flowerets
  • 1 CupSliced Fresh Mushrooms
  • 1/2 CupDiced Red Pepper
  • 2 tspCornstarch
  • 4 CupsHot Cooked Chinese Noodles

Steps

  1. 1

    Heat 1 tbsp of oil in 12-inch skillet over medium-high heat. Add chicken, garlic, and gingerroot; stir-fry 2-3 minutes or until chicken is browned.

    Add onion, carrots, 3/4 cup of broth, soy sauce, and sugar. Cover and cook over medium heat for 5 minutes, stiffing twice.

  3. 3

    Add broccoli, mushrooms, and bell pepper. Cover and cook about 5 minutes, stirring occasionally, until chicken is no longer pink and vegetables are crisp.

  4. 4

    Mix cornstarch with remaining 1/4 cup of broth. Stir into chicken mixture. Cook, stirring frequently, until sauce is thickened. Serve over noodles.
