Vietnamese Spring Rolls

Crunchy and crispy, Vietnamese Spring rolls have become a favorite of mine. Vietnamese food is all about balance, and hence, these spring rolls, though initially deep fried, are covered with vegetables and another layer of rice paper, making it a well balanced dish.

Steps

In a bowl, mix all the ingredients of the filling.

Now take a spring roll sheet and place only 1 tsp of the mixture in the center.

Keeping the mixture in the center, roll. Paste the edges using water, so that it doesn't break open while getting deep fried.

Deep fry all the rolls in hot oil.

To eat like a real Vietnamese, take another rice paper, place lettuce, mint, carrot and coriander and one deep fried spring roll.

Roll it and enjoy with sweet chilli sauce.
