Brown Rice with Salmon and Garlic Butter Sauce

Slice the bell peppers into rings and toss with a little butter. Cut the salmon into 5 pieces, sprinkle with a little salt and ground black pepper, and spread a thin layer of butter on top (make sure to remove the scales). Arrange the salmon pieces on a baking tray as shown, placing the bell pepper rings underneath to prevent the skin from sticking to the tray.

Bake at 425°F (218°C) for 15-20 minutes. If you don't have an oven, you can pan-fry the salmon until golden on both sides.

To make the sauce: Sauté 2 tablespoons of butter with minced garlic, then add soy sauce, vinegar or lemon juice, honey, and 2 tablespoons of water. Season to taste so the sauce is slightly salty, tangy, and sweet. Simmer over low heat until slightly thickened, then add chopped cilantro and remove from heat.

Serve the salmon with the sauce for dipping—it's delicious! If you like it spicy, add some chili to the sauce.
