Place about five mint leaves in your palms and very gently give a single squeeze to release fragrant oils. Add this to the base of glass.

Cut the lime into quarters. Place two pieces in the glass and just slightly mash on top of the mint. Don't overdo as you don't want extreme flavour profiles but just a perfect balance.

Stack crushed ice to the glass till almost full then top with club soda. Garnish with a slice of lime and mint. Enjoy!
