Ingredients

  • 140 gfirm tofu
  • 1/4 cupbrown rice, cooked in 3/4 cup vegetable broth
  • 1/2red pepper, sliced
  • 1 (5 g)teaspoon dried mango
  • 1/2 teaspoongarlic powder
  • 1/4 teaspoonginger powder
  • 1/2 teaspoonwhite pepper
  • 1 tablespoonlight soya sauce (no sugar added)
  • to tasteSalt
  • Sesame oil to cook
  • Spring onions and sesame seed for garnish

Steps

  1. 1

    Blend the mango, garlic, ginger, white pepper, 1 tablespoon water and soya sauce to create your marinade.

  2. 2

    Dress your tofu in half the sauce for a few hours.

  3. 3

    Stir fry the tofu for 5 minutes at low heat and move into a bowl.

  4. 4

    Add oil to your wok, once hot, add the peppers, tofu and brown rice and mix well.

  5. 5

    Add the remaining sauce and salt and stir-fry for 5 minutes at high heat. Let the mix char slightly and switch off the gas.

  6. 6

    Garnish with spring onions and sesame seeds.
