In a bowl, add maida, pinch of salt, kalonji, 2 tbsp oil and mix well until maida binding is perfectly done,. You can ensure by trying make a shape and if it holds the shape then your mayan is prepared well.

Now, add water to make tight dough. Add 1 tbsp oil on top and keep aside for resting for around 10-15 minutes.

After 10-15 minutes, divide in small lemon sized balls. Take each ball and using roll pin make poori. Prepare all the poories with all the remaining maida balls.

Heat the oil in a kadai, once the oil is hot turn it to medium flame. Fry all the poories. Serve with dum aloo or any of your favourite sabji or chicken or mutton kosha.
