First, mix the flour with salt, carom seeds, and baking soda.

Add the oil and mix well. The oil should be evenly incorporated into the flour. To check, press some dough in your hand—if it holds its shape like a ball, the oil amount is right. If not, add a little more oil and mix again.

Gradually add water and knead into a stiff dough.

Cover and let the dough rest for a while. Then knead it again briefly. Meanwhile, heat oil in a deep pan over high heat for frying.

Divide the dough into large balls and roll one out into a thin sheet. Cut it diagonally into strips using a knife.

Once the oil is hot, reduce the heat to low. Add the cut strips and stir gently. Adjust the heat to medium. While frying the first batch, roll out and cut the next portion of dough.

Fry for about 7-8 minutes until golden and crisp. Remove from oil and repeat with the remaining dough.
