A traditional dessert from Catalonia that we really enjoy at home. It's very easy to make, and with the leftover egg whites, you can make a baked omelet, which you'll find the recipe for below.

A traditional dessert from Catalonia that we really enjoy at home. It's very easy to make, and with the leftover egg whites, you can make a baked omelet, which you'll find the recipe for below.

Place the citrus peels and cinnamon sticks in a pot over medium heat.

In a bowl, whisk the egg yolks with the sugar and cornstarch.

Once the milk comes to a boil, slowly add the egg yolk mixture while stirring constantly. The mixture will thicken quickly. Remove from heat, cover the pot, and let it cool for about 30 minutes to allow the flavors to blend.

Prepare the serving dishes. You can add mini cookies to the bottom if you like. Remove the peels and cinnamon sticks from the cream, then pour the cream into the dishes.

Sprinkle brown sugar on top and caramelize it with a kitchen torch. (I added a cookie on top as well.) Chill in the refrigerator before serving.
