Ingredients

  • 1 pintchicken stock
  • 100 gtinned sweetcorn
  • 2 tbspsoy sauce
  • 1 tbspsesame oil
  • 1 clovegarlic, crushed
  • Cooked shredded chicken
  • 1 tbspcornflour
  • 1/2green chilli, finely chopped

Steps

    Gently heat the sesame oil with the crushed garlic and soy sauce.

    Add the green chilli and cook for a few minutes, then add the chicken stock. Bring the stock up to a gentle simmer then add the sweet corn and cooked chicken.

    When it’s is all heated through, add the corn flour mixed with a little water, and stir over a medium heat until it’s thickened. Then serve immediately.

Sonia. You’ve given another example of making a tasty and nourishing meal out of what’s to hand. “Waste not, want not!” is a very gratifying approach to cooking. Whenever I chat to professional cooks, including Michelin chefs, they uniformly say that they deplore any food waste. Home cooks are learning from present difficulties to make the most of what they’ve got and anything Cookpad can do to help is a Good Thing. John
