A traditional Greek sweet enjoyed by both kids and adults! Tahini is a staple during the Easter fasting period, so home cooks created this delicious treat to make fasting tastier and more satisfying.

In a small bowl, combine 1/3 cup (about 100 ml) of the warm water with the yeast and sugar. Let it sit for 15 minutes.

In a large bowl, add the flours, sesame oil, yeast mixture, vanilla, and the remaining water. Knead until you have a soft dough. Let it rest for 1 hour.

Divide the dough into 8 pieces and shape each into a ball. On a floured surface, roll each ball out with a rolling pin into a fairly thin sheet. Sprinkle with sugar and cinnamon, then drizzle about 1/4 cup (about 60 grams) tahini over each piece. Roll up each sheet and coil into a spiral shape.

Place the spirals on a baking sheet, brush with melted margarine or butter, and sprinkle with cinnamon and sugar. Bake in a preheated oven at 340°F (170°C) for about 30 minutes.

As soon as they come out of the oven, pour the cooled syrup over the hot pastries. Let them sit for about 30 minutes before serving.
