Ingredients

  • For the dough:
  • 3 1/3 cupsall-purpose flour (about 400 grams)
  • 3/4 cupself-rising flour (about 100 grams)
  • 2 1/2 tablespoonssesame oil (about 35 ml)
  • 1 packetinstant dry yeast
  • 1 tablespoonsugar
  • 1 1/6 cupswarm water (about 280 ml)
  • 1 packetvanilla sugar or 1 teaspoon vanilla extract
  • For the filling:
  • 2 cupstahini (about 500 grams)
  • 3/4 cupsugar (about 150 grams)
  • 2 tablespoonsground cinnamon (about 30 grams)
  • For the syrup:
  • 2 cupswater
  • 2 cupssugar
  • A fewstrips of lemon peel. Boil together for 5 minutes, then set aside to cool
  • 3 1/2 tablespoonsmelted margarine or butter (about 50 grams) for brushing before baking

Steps

    In a small bowl, combine 1/3 cup (about 100 ml) of the warm water with the yeast and sugar. Let it sit for 15 minutes.

    In a large bowl, add the flours, sesame oil, yeast mixture, vanilla, and the remaining water. Knead until you have a soft dough. Let it rest for 1 hour.

    Divide the dough into 8 pieces and shape each into a ball. On a floured surface, roll each ball out with a rolling pin into a fairly thin sheet. Sprinkle with sugar and cinnamon, then drizzle about 1/4 cup (about 60 grams) tahini over each piece. Roll up each sheet and coil into a spiral shape.

    Place the spirals on a baking sheet, brush with melted margarine or butter, and sprinkle with cinnamon and sugar. Bake in a preheated oven at 340°F (170°C) for about 30 minutes.

    As soon as they come out of the oven, pour the cooled syrup over the hot pastries. Let them sit for about 30 minutes before serving.
