Roasted chickpeas, veggies and garlic 🌱

If you haven’t tried roasting chickpeas, you’re missing out! Pop them in a medium oven with any veggies you have and they make a great base for a simple lunch or a family meal. You can eat them with salad, rice, the base of a curry, stew or to stuff peppers!

Wash and chop the veg, drain the chickpeas and pat dry. Add a few cloves of unpeeled garlic and drizzle (or spray if you have something suitable) with oil of your choice.

Cook in a medium high oven for around 25 minutes. Remove the tomato skins and squeeze the garlic from its skin. This is tasty on its own or as a base for a family meal. On this occasion I stuffed the peppers with the chickpeas and veg and enjoyed with hot sauce and mint 😋
