Ingredients

  1. 1 canchickpeas
  2. Any veg of your choice
  3. A fewcloves of garlic
  4. 1 tablespoonolive or rapeseed oil
  5. Sprinkle of sea salt
  6. Lemon wedge (optional)
  7. Hot sauce or Tabasco (optional)

Steps

  1. 1

    Wash and chop the veg, drain the chickpeas and pat dry. Add a few cloves of unpeeled garlic and drizzle (or spray if you have something suitable) with oil of your choice.

    Cook in a medium high oven for around 25 minutes. Remove the tomato skins and squeeze the garlic from its skin. This is tasty on its own or as a base for a family meal. On this occasion I stuffed the peppers with the chickpeas and veg and enjoyed with hot sauce and mint 😋
