Fresh Applesauce

This applesauce is the applesauce I grew up on. Every fall our family would go apple picking. We came home with tons of apples and this applesauce was a favorite . It's ultra smooth and silky, sweet and tart as no sugar or sweetner is added. Of course you can add sweetner if you like. A blend of tart and sweet apples works best and having some red apples gives a beautiful pimk color to the applesauce.

Steps
- 1
Wash apples well. For a nice light pink coor for your applesauce be sure to have some red apples
- 2
Cut apples in quarters, add to large stockpot with apple cider, salt and butter
- 3
Cover pot and simmer, stirring occasionally to be sure to prevent sticking and to rotate softer apples to the top. This can take up to 2 hours depending on your apples crispness
- 4
Cook until apples are very soft
- 5
Press apples through a food mill discarding all peels and seeds
- 6
Then add applesauce to a blender and blend until smooth
- 7
Refrigerate or freeze. This applesauce freezes great
