Mix the first five ingredients listed and form a smooth lumpfree batter.

Now heat apan with oil and spluter mustard, urad dal, curry leaves and cashews. Add the finely chopped ginger and green chillies. Saute for a minute and add it to the batter. Keep the batter aside to rest for 10 minutes.

After 10 minutes, add baking soda or eno and give it s quick mix. Pour the batter immediately to the greased idli moulds and steam it for 10-15 minutes. Done.

Serve hot with your favourite chutney😋.
