Take a small pan/kadhai, heat the pan and add oil to it.

Once the oil is hot, add mustard seeds, jeera, hing powder, green chillies, onions and little salt. Saute it nicely.

Add the grated carrot to the pan once the onions turn brownish, mix it well.

Start adding ¼ tsp turmeric powder, ½ tbsp chilli powder, ½ tbsp garam masala to it. Saute all till the raw smell of the masala goes.

After a min or 2 add the chopped curry leaves and coriander leaves to it.

Mix it nicely. Turn off the stove. Leave it for few mins. Then add the masala to the batter.

The batter will turn yellowish. After mixing it leave the batter for 10-15 mins so that the flavours get infused to the batter.

Take a paniyaram kall, add oil to all the kuzhi and using a ladle pour the masala batter in all the kuzhi. Keep the stove on low flame for better results.

After a while turn the upside of the paniyaram down using the paniyaram stick. Drizzle some oil over the paniyaram.

Once both the side of the paniyaram turns brown, crispy and cooked well. Remove it from the paniyaram pan.

Serve it with spicy tangy tomato chutney or thokku!
