Chicken Milanesas

Cooking Instructions

Crack eggs in a bowl. Whisk together with a spoon of miced garlic.

Mix salt about a spoon, sprinkle pepper and red pepper to liking. Chop hand full of parsley and add to egg. Mix all together well.

Wash and pat dry chicken. If you use chicken breast, slice in half horizontal to make thinner. Add chicken to bowl. Let marinate for 30min.

Prepare bread crumbs in a pan and place chicken pne by one on there and cover with bread crubs. With one hand press down until chicken is fully covered in bread crumbs. Flip and do the same.

Once breaded place on a plate. After all chicken is breaded, i do it all over again, so that the beading is thicker. Dip ack in egg and re bread.

After all are breaded for a second time, heat oil, once it is heat put milanesa in oil to fry.(oil must cover the whole breast)

Flip once the breast has a golden colour and wait till other side looks the same. Remove from oil and place on a plate with napkin yo make sure all oil is drained. (I hold it over the oil till it all drips off). Serve with salad and fries or smashed potatoes! 🙃

I've seen somewhere that it's nice to add parmesan cheese in the egg mixture to make Milanese chicken cutlets. So I added parmesan cheese to my usual batter - "If You're Frying, You Need This! 2 Step Simple Batter!".It's also good if you sprinkle with dried basil and salt (rock salt, etc.) instead of basil oil.I think extra virgin olive oil will make this dish more fragrant and tastier, but it's ok to use normal pure olive oil or vegetable oil.
