Atayef/ KatayefArabic sweet pancakes

So these are Middle Eastern all time favourite sweet specially for Ramadan Kareem. I have just made a few changes. Due to quarantine nowadays.. I was out of yeast so tried them without it.. And I didn’t soak them in sugar syrup to avoid extra sweetness. You can freely soak them just like we do our Gulab Jamuns..
Also I added Khoya to the filling which is totally upto you to add or leave..
Final thing is that they can be fried or baked.. I fried them.. And the end is that they turn out so delicious and yummy as it is..
Tips: If you have yeast, add half tsp to the lukewarm milk and sugar and keep for 10 mins then add them to the other ingredients.
If you cant close the ends, brush some batter to the ends and fold and pinch softly..

Ingredients

30 mins
10 mini pancakes
  • 1 cupflour
  • 2 tbspsugar
  • 1/4 tspsalt
  • 3/4 cupmilk
  • 2 tbspoil
  • 1egg
  • 2 tspbaking powder
  • For filling:
  • 1/2 cupmix dry fruits crushed
  • 50 gmkhoya(dried milk clusters)
  • 1/2 cupfinely chopped dates and raisins

Steps

  1. 1

    In a big mixing bowl add all the ingredients and mix well. Then keep the batter for 1 hour to set.

    Now grease the pan with ghee/ butter and make mini pancakes with a ladle or measuring 2 tbsp.keep low flame.

    When bubbles appear and and batter starts to dry on the top, remove in a kitchen towel. Make all of them.

    Now add the filling 1/2 tsp and close the ends making half moon.If they don’t close, use the batter on the edges and press together softly.

    Nowin a wok fry in 1-2 inch oil on medium high flame till nice golden colour appears.

    Dip into or drizzle some sugar syrup onto the pancakes, garnish with some super crushed dry fruits.

    Serve.
