Steps

Peel wash and samp off the carrots and keep aside. Heat 8 -10 tablespoon cooking oil / mustard oil and keep it aside to cool down.

Now cut it into long roundals as shown in pic and than.put criss cross cuts so that ut remains intact and doesnt break into halves.

Now prepare the masala / spices for pickle. Take A bowl put grounded mustard seeds, fennel seeds, finely chopped green garlic, salt, turmeric and red chilli powder.

Add 2-3 teaspoon oil and mix.well. Now fill this mixture in every carrot roundal one by one and place roundals in the glass jar.

Once all carrot roundals are stuffed and placed in the jar. Pour the earlier heated oil and fill up the jar. Close the lid and store it. It's ready to consume after 2 days. The sour pickle will be ready in 3-4 days
