A delicious, light recipe that skips the heaviness of frying but still delivers great flavor in the final result!

Grate the zucchini using the large holes of a box grater and place them in a colander to drain excess liquid.

Squeeze the zucchini very well and transfer to a large bowl. Grate the potato and carrots into the bowl, add the onions, and mix.

Add all the remaining ingredients and mix, kneading well. Place the mixture in the refrigerator for about 1 hour.

Preheat the oven to 400°F (200°C).

Lightly dip your fingers in olive oil, take the desired amount of mixture, and shape into patties. Place them on a baking sheet lined with parchment paper.

Bake until golden brown, about 30–35 minutes.

Serve ideally with yogurt sauce! Enjoy!
