Lockdown Chicken Pulao

We all are going thru the tough times of the COVID-19 pandemic and the best way is to stay at home and maintain social distancing. Today my family and I were in mood for chicken and I did not want to give much stress to my old mom to cook so I decided to cook a quick chicken pulao. The idea was to prepare a one pot meal so that there are less utensils to wash later. It was also my first attempt at a chicken pulao and I prepared it with the ingredients that were available in my kitchen. This is a quick, jhatpat recipe which uses limited ingredients that are available in most kitchens and house pantry. So, here it comes.

Ingredients

  • 500 gmschicken (curry cuts)
  • 400 gmsBasmati rice
  • 3medium onions, sliced long
  • 2 tbspoil
  • 1 tbspghee
  • 2 tbspginger-garlic paste
  • 4-5green chilies split in half vertically
  • 1 tspgreen chilly paste
  • 1/2 tbspcumin seeds
  • 2bay leaves
  • 1 inchcinnamon
  • 2star anise
  • 4green cardamons
  • 1black cardamon
  • 5-6cloves
  • 8-10black peppercorns
  • 1/2 tbspfennel seeds
  • 1&1/2 tbsp coriander and cumin powder
  • 1/2 tspgaram masala
  • 1 tspblack pepper powder
  • Salt as per taste
  • 1/2 tbsplemon juice

    While the cooking time is roughly 25 mins but the prep might start way earlier depending on the chicken. Before you start cooking wash your hands with soap and water for 20 secs as per the health advisory. While all of us are at home during this lockdown we may have chicken stocked in the freezer. So thaw the chicken in advance and clean it thoroughly. If you have procured fresh chicken then you can directly clean the chicken and proceed.

    Clean the basmati rice and soak it in water for 20 mins. Slice the onions vertically. Slit the green chilies in half vertically and keep it aside. Remove the whole spices in a plate and keep it aside.

    Preferably take a heavy base pot and put it on the gas on high flame to heat. It's just helps you to avoid less stirring so that nothing sticks to the bottom. I used an alluminium pot which made me work out in the kitchen. Once the pot heats up add oil and ghee and let it heat up. Add the whole spices and stir it for few seconds till the spices are well roasted and flavors are released.

    Now add the sliced onions. Fry them till the onions start getting golden brown color. Now add the ginger garlic paste and saute for a minute of two. Add couple of tablespoon of water if it sticks to the bottom of the pan. Add the green chillies and saute for another minute.

    Add the coriander cumin powder, black pepper powder, garam masala and stir for a minute or two. Add few tablespoon of water if it sticks to the bottom. Stir it well. Add salt as per taste and stir. The basic masla mix is ready.

    Add the cleaned chicken and stir well. The chicken will release its own water. At this stage if you have curd then add 2 tablespoon of whisked curd which will give sourness, texture and moisture. I didn't have so I didnt add. Cover the lid and let the chicken cook for 10 mins. If you feel that the masala is getting dry and sticking to the bottom of the pan then add 1/4th cup of water. Stir and let is cook till the chicken is 60% cooked. Add lemon juice and stir well.

    Add the soaked rice. Stir it well. Add 600ml of water as there would already be some water that chicken would have released. If you think that the chicken mix is dry then you can make water to 800ml. (Basically the water.shoukd be twice the quantity of basmati rice.) Stir well, cover the lid and let it come to a boil. Reduce the flame to medium and let it cook for another 10-12 mins. Stir lightly once in between. Check the rice which sould be just about cooked.

    Turn off the flame and leave the pot covered for another 10 mins so that the rice cooks completely well in the stem within the pot. The chicken will also be cooked completely. Garnish it with coriander leaves and serve with raita. I did not have coriander leaves or raita but it tasted awesome. Try it out!

    Lastly, maintain social distancing. Cover your face with mask when you step out. Wash your hands with soap water frequently. Sanitize your purchases. Do some basic excercise at home. Stay home, stay safe. :)
