Kerala's traditional Cabbage Thoran is a quick stir fry which very quick to make. Goes well with steamed rice and even dal and roti

Steps

Shred the cabbage finely, wash, clean, drain and keep aside.

Grind coconut, cumin, dry red chilli and onion to a coarse powder without adding water.

Heat a pan with oil. Splutter Mustard, Bengal gram, Urad dal and curry leaves. Add cabbage, salt, a pinch of turmeric and mix well. Close with a lid and cook on a low flame for 3-4 minutes. Sprinkle water lightly if it sticks to the pan.

Now add the ground paste and stir fry for 3-4 minutes. Switch off the flame and serve hot with steamed rice and curry.

NOTES: You can add green chilli instead of dry red chilli for grinding.
The same recipe can be used for different vegetables like Spinach, Beetroot, Carrot, Cauliflower, Beans etc. Only the cooking time of veggies may vary.
