Homemade Aloo sev
Enjoy with some tea #evening snacks
Steps

First boil the potatoes till they are cooked properly.

When potatoes are cooked and warm, peel and mash them with vegetable masher.

Add all spices/ masala into mashed potatoes and mix well

Now add the gram flour (Besan) directly into potatoes mixture.

Gently mix and make a dough of it. There is no need to add water in it. Then cover the dough and keep it aside.

To make sev, take a disc with small holes. Grease the top of the disc with oil.

Rub a little bit oil on hands and roll the daugh into log and gently place it in the save maker mould.

Cover the sev maker with a lid.

For frying the sev, heat the oil in pan.

Add a small piece of the dough. If the dough comes up gradually, then the oil is ready. If the dough sits at the bottom, the oil is still cold.

In the oil, directly press the sev maker to make sev. Move in rounds so that the aloo sev is evenly distributed.

Flip over and fry the other side.

Keep on frying aloo sev till the sizzling reduces in the oil and the colour of aloo sev changes to golden. Do flip a couple of times, to get an even colour.

Remove the fried aloo sev from the oil

When they are still warm, to make them more chatpata, sprinkle 1/2 to 1 tsp chaat masala. Once cooled store aloo sev in an air-tight jar.
