French Beans and Fenugreek Leaves Fry

A Green delight that goes well with Chapatis and Rotis. This is my innovative way of frying Beans in Winters especially when Vegetables are available aplenty. Simple ingredients go into making this fry and tastes so good too. Kids will never realize that it has got Fenugreek Leaves in it and will, therefore, have it without much fuss. Eat Green, eat healthy. And to top it all, it's a great one for both Lunch or Dinner. And also a filling one for Breakfast as well. It's also a lovely option for Lunchbox ideas.
And it's easily done with minimum of pantry staples. This stir fry recipe is a flavourful dish full of the goodness of Leafy Green Vegetables. Though it's made with small Fenugreek Greens available in the markets also known as Choti Methi, it can be very well made with normal Fenugreek Greens available throughout the Country. This will not compromise on it's taste. It would be equally great.

Steps

Heat Oil and add Asafoetida and Ginger garlic paste to it. Fry for a minute or two.
Also, add the rest of the spices now. Fry for a minute.
And finally, add the chopped beans to it. Add salt according to taste and saute on a high heat for almost 10 minutes. Cover with a lid now and allow it to cook further without adding any water. - 2
After almost 15 minutes, add roughly chopped small fenugreek leaves, also called as choti methi in Hyderabad.
Mix well and garnish with coriander.
Serve hot with Chapatis or Phulkas. It goes well with Boiled Rice and Khatti Daal.
