Mango with Sticky Rice
#chefdeena. Sticky rice flavored with sweet coconut milk and served with fresh mango is a beloved dessert in Thailand and in Malaysia. You only have to try it once to understand why it’s a Thai favorite!
Steps
- 1
Glutinous or Sweet Rice – Start with the right variety of rice. It is labeled “glutinous” or “sweet”.
- 2
Soak – Before cooking, the rice must be soaked in water for 4hours.
- 3
Steam – The rice is steamed over simmering water. Steam rice, covered, for 20 minutes. Using a fork or chopstick, gently loosen the rice. (This will help it to cook evenly) & steam for another 10 minutes.
- 4
Make sweet coconut sauce: Combine cup coconut milk with sugar and salt in a saucepan over medium heat. Simmer until sugar dissolves, ~2 minutes *keep stirring*. As soon as sticky rice is done, transfer to a bowl and stir in coconut sauce.
- 5
Divide sticky rice and mango between serving plates. Garnish with coconut sauce, toasted coconut flakes or sesame seed over top or just plain. Both taste yummy
