When you crave a piece of Carrot Cake, you can make this Carrot Cake in a coffee cup in less than 5 minutes, only if you have a Carrot and, most importantly, a microwave. The hardest part is grating a Carrot, I suppose. No Egg is needed.

Grate 1 small Carrot into a coffee cup. Add Butter and microwave for 1 minutes. This cooking process will make the grated Carrot sweet.

Add all other ingredients and mix well. Cover with a small plate and cook for 1 minute or until cooked. Sprinkle with extra Cinnamon and enjoy. *Note: I used 1100W microwave.
