Ingredients

  • 1 cupquinoa, cooked
  • 1 canchickpeas
  • 1/2 cupcherry tomatoes, halved
  • 1 cupcucumber
  • 1 cupspinach
  • Dressing
  • 1/4 cupolive oil
  • 2garlic cloves, minced
  • 2 tbsplemon juice
  • 1 tbspbalsamic vinegar
  • 1 tspmaple syrup or honey
  • 1 tspsalt
  • to tasteBlack pepper

Steps

  1. 1

    Gather all the vegetables and quinoa, pour the dressing on top and mix. For the dressing, take a small bowl and mix olive oil, balsamic vinegar, maple syrup, lemon juice, minced garlic, salt and add black pepper to taste.
