Crispy Seafood Pancake with Bean Sprouts

Adapted from Matt Matt's recipe. Cook one pancake at a time in a skillet, using about 1 ladle of batter per pancake. Add your choice of seafood. This batter will be crispy around the edges and soft and chewy (similar to 'oyster omelet') in the center. For extra crispiness, use less batter.
Crispy Seafood Pancake with Bean Sprouts

Clean the vegetables and seafood, then let them dry for a while.

In a bowl, mix the crispy frying flour, tapioca starch, rice flour, baking powder, salt, and black pepper. Add the ice-cold water and stir until smooth.

Heat oil in a skillet over medium-high heat. Pour in the batter, then add mussels, squid, shrimp, green onions, and cilantro to the skillet.

Beat the eggs and pour them over. Use a spoon to spread the eggs evenly over the pancake.

When the edges are crispy, flip the pancake over.

Move the pancake to one side of the skillet. Add the bean sprouts to the empty side and stir-fry. Sprinkle with more green onions and cilantro.

When the bean sprouts are cooked and the pancake is crispy, serve immediately.
