Ingredients

Serves 4 servings
  1. 14 oz.fideos pasta, no. 3 (about 400 grams)
  2. 1 1/3lbs. pork ribs, cut into pieces (about 600 grams)
  3. 1Spanish-style chorizo sausage
  4. 4 1/4 cupschicken broth (1 liter)
  5. 1onion
  6. 2 clovesgarlic
  7. 2tomatoes, crushed
  8. 1bay leaf
  9. Sea salt
  10. Black pepper
  11. Olive oil

    Season the pork rib pieces with salt and pepper, then brown them in a large skillet or paella pan with hot olive oil.

    Slice the chorizo and add it to the pan.

  3. 3

    Meanwhile, finely chop the onion and garlic, then add them to the pan. Lower the heat and cook slowly.

  4. 4

    Add the bay leaf as well.

  5. 5

    When the onion and garlic are soft and golden, stir in the crushed tomatoes. Adjust the salt if needed and continue to cook over very low heat.

  6. 6

    After about 20 minutes (or when the mixture looks irresistible), add the fideos pasta and sauté briefly.

  7. 7

    Finally, pour in the (preferably hot) chicken broth and let the stew cook until done.
