Ingredients

6 servings
  1. 12 oz.Keilbasa sausage, sliced thinly
  2. 1 tbsp.olive oil
  3. 1/2onion, diced
  4. 1bell pepper, diced
  5. 2 clovesgarlic, minced
  6. 2 cupsunsalted chicken broth
  7. 1/2 cupheavy cream or milk
  8. 1 can (14.5 oz)diced tomatoes, undrained
  9. 2 cupselbow pasta
  10. 1/2 tsp.each salt, cajun seasoning, smoked paprika
  11. 1/4 tsp.pepper
  12. 1 cupshredded colby jack cheese

Cooking Instructions

    Heat the oil on medium heat in a large, deep skillet with a tight fitting lid. Add the onion, peppers and sausage and cook until the veggies are softened and sausage is beginning to brown. Stir in the garlic and cook another couple of minutes, until fragrant. Then increase the heat to med-high and stir in the diced tomatoes, broth, cream, seasonings and the pasta.

    Once it begins to boil, reduce heat to medium-low and place lid on. Simmer about 11-13 minutes, stirring occasionally, or until pasta is al dente and the majority of the liquid has absorbed.

    Remove from heat and stir half of the cheese into the pasta until its melted. Let it sit for a couple of minutes, to let the sauce thicken, then sprinkle the remaining cheese over the top of the pasta. Place lid back on until cheese is melted, about 2 minutes. Serve immediately and enjoy!

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
